  • 4 boneless, skinless chicken breasts (about 2 lb)
  • 2 cups low-sodium chicken broth
  • 1 can white kidney beans (19 oz), drained and rinsed
  • 1 can sweet corn (12 oz), drained
  • 1 can green chiles (4 oz)
  • 4 ounces cream cheese, room temperature
  • 1 teaspoon green hot sauce
  • 1 teaspoon chili powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • 1 tablespoon cornstarch (optional)
  • 1 tablespoon water (optional)
  • Chips, avocado, lime wedges, salsa, cheese or jalapenos (for serving)

Instructions

  1. In a Dutch oven or soup pot, combine the chicken and broth. Bring to a simmer over medium-high heat; reduce to medium-low and cover. Simmer for about 15 minutes until chicken reaches 165°F.
  2. Remove chicken to shred on a cutting board using two forks. Return shredded chicken to the pot.
  3. Stir in white beans, corn, green chiles, hot sauce, chili powder, onion powder, and salt.
  4. Add cubed cream cheese and stir until melted. Simmer for another 10 minutes.
  5. For thicker chili, mix cornstarch with water and add it while stirring until desired consistency is reached.
