  • 1 block (14 oz) extra-firm tofu
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 medium onion
  • 3 cloves garlic
  • 1 tablespoon fresh ginger
  • Soy sauce or tamari
  • Rice vinegar
  • Maple syrup
  • 3 tablespoons cornstarch
  • 2 tablespoons neutral oil for cooking
  • Green onions and sesame seeds for garnish

Instructions

  1. Press the tofu between kitchen towels for 15 minutes to remove moisture.
  2. Cube the pressed tofu and toss it with cornstarch until evenly coated.
  3. Heat oil in a skillet over medium-high heat and cook the tofu until golden brown on all sides. Remove from the skillet.
  4. Sauté sliced bell peppers and onion until caramelized, then add minced garlic and ginger.
  5. Add pineapple chunks and let them caramelize briefly before adding soy sauce, rice vinegar, and maple syrup.
  6. Return the crispy tofu to the skillet and stir until well-coated in the sauce.
