Tortellini Pasta Salad is a vibrant and delicious dish that’s perfect for any gathering, from barbecues to potlucks. This easy-to-make salad combines cheesy tortellini with a medley of fresh vegetables and a zesty Italian dressing, creating a delightful flavor explosion in every bite.

  • 20 oz cheese tortellini
  • 1 pint cherry tomatoes, halved
  • 1 cucumber, chopped
  • 1/2 red onion, sliced
  • 1 cup kalamata olives, chopped
  • 1 cup mozzarella balls
  • 1/2 cup salami or pepperoni (optional)
  • 2 cups baby spinach or arugula
  • Dressing: olive oil
  • red wine vinegar
  • Dijon mustard
  • honey
  • garlic
  • dried oregano

Instructions

  1. Cook the cheese tortellini according to package instructions until al dente. Drain and rinse under cold water.
  2. Prepare the dressing by combining olive oil, vinegar, mustard, honey, minced garlic, oregano, salt, and pepper in a jar with a lid. Shake until emulsified.
  3. Toss half the dressing with the warm tortellini in a large mixing bowl. Let cool for about 10 minutes.
  4. Add cherry tomatoes, cucumber, red onion, olives, mozzarella balls, salami (if using), spinach or arugula, and basil. Drizzle with the remaining dressing and toss gently.
  5. Cover and refrigerate for at least two hours before serving to allow flavors to meld.
