  • 35 chocolate creme cookies
  • 5 tbsp unsalted butter
  • 24 oz cream cheese
  • 8 oz mascarpone cheese
  • 1 ½ cups granulated sugar
  • 4 large eggs
  • ½ cup heavy cream
  • 1 cup sour cream
  • 12 ladyfinger biscuits
  • ½ cup strong black coffee

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a springform pan.
  2. Make the crust by blending chocolate cookies with melted butter until fine crumbs form; press into the pan and bake for 7–8 minutes.
  3. Lower oven temperature to 320°F (160°C). In a stand mixer, beat cream cheese and mascarpone with sugar, vanilla, and salt until smooth. Add eggs gradually, then mix in heavy cream, sour cream, and cornstarch.
  4. Pour half of the batter over the cooled crust, layer with dipped ladyfingers, then top with remaining batter.
  5. Bake in a water bath for about 80 minutes or until edges are set but center jiggles slightly.
  6. Cool at room temperature before refrigerating overnight.
  7. Prepare topping by whisking mascarpone with sugar and dissolved coffee; fold in whipped cream. Spread over cooled cheesecake and dust with cocoa powder before serving.
