Ingredients

  • 2 ripe mangoes, diced
  • 1 red bell pepper, thinly sliced
  • 1 cucumber, thinly sliced
  • 2 medium carrots, julienned
  • ½ cup fresh cilantro, chopped
  • Juice of 2 limes (about ¼ cup)
  • 2 tbsp soy sauce (as a substitute for fish sauce)
  • 1 tsp chili flakes

Instructions

  1. Wash all produce thoroughly.
  2. Julienne the carrots and thinly slice the cucumber and red bell pepper.
  3. In a large bowl, combine the diced mangoes, bell pepper, cucumber, carrots, and chopped cilantro.
  4. In a small bowl, whisk together lime juice, soy sauce, and chili flakes until well combined.
  5. Pour the dressing over the salad mixture and gently toss everything together until evenly coated.
  6. Chill in the refrigerator for about 15 minutes before serving to let flavors meld.
