  • 6 bell peppers
  • 1 onion, diced
  • 1 lb lean ground beef
  • 14.5 oz can diced tomatoes
  • 18 oz can black beans, drained & rinsed
  • 15 oz can corn, drained & rinsed
  • 2 cups cooked brown rice
  • 1 1/2 cup shredded cheddar jack cheese
  • Taco seasoning packet
  • Garlic powder
  • Chili powder
  • Salt
  • Black pepper

Instructions

  1. Preheat the oven to 350°F.
  2. Cut the bell peppers in half and remove the seeds. Place them in a baking dish with their open side facing up and bake for 5 minutes.
  3. In a large skillet over medium heat, add olive oil and sauté onions with garlic powder, chili powder, salt, and black pepper until soft.
  4. Add ground beef to the skillet and cook until browned.
  5. Stir in diced tomatoes, black beans, corn, cooked brown rice, and taco seasoning; mix well.
  6. Stuff each pepper with the filling mixture and cover with foil before baking for about 10 minutes.
  7. Remove the foil and add cheese on top; bake uncovered for another 15 minutes until melted.
