  • 2 lbs ground beef
  • ¾ cup Italian-style breadcrumbs
  • ½ cup grated parmesan cheese
  • 2 eggs
  • 1 red bell pepper, finely chopped
  • 1 small red onion, finely chopped
  • 1215 large fresh basil leaves
  • 1 ¼ cup shredded mozzarella cheese
  • Marinara sauce (for serving)
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium skillet, heat olive oil and sauté onion and bell pepper until soft. Add garlic and cook until fragrant.
  3. In a large mixing bowl, combine ground beef, breadcrumbs, parmesan cheese, eggs, tomato paste, salt, black pepper, parsley, and sautéed vegetables. Mix until well combined.
  4. Shape the meat mixture into an 8"x15" rectangle on parchment paper.
  5. Layer deli chicken (or turkey), basil leaves, and mozzarella over the meat mixture; roll it up tightly using the parchment paper.
  6. Place on a baking sheet lined with parchment paper and bake for about 1 hour.
  7. Let rest for 10 minutes before slicing. Serve with marinara sauce over cooked pasta or zucchini noodles.
