  • 2 lbs Yukon Gold potatoes, thinly sliced
  • 3 large sweet onions, sliced
  • 4 tbsp unsalted butter
  • 2 cups low-sodium beef broth
  • 1 ½ cups Gruyère cheese, shredded
  • 2 tsp fresh thyme, chopped
  • Salt and pepper to taste
  • 2 cloves garlic, minced

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish.
  2. In a skillet over medium heat, melt the butter and sauté sliced onions until golden brown.
  3. Add minced garlic and thyme; cook for another minute.
  4. Layer half of the sliced potatoes in the baking dish followed by half of the onions. Repeat layers.
  5. Pour beef broth over the layers and top with shredded cheese.
  6. Cover with foil and bake for 45 minutes. Remove foil and bake an additional 15 minutes until golden brown.
  7. Let rest for 10 minutes before serving.
