  • 2 pounds beef (chuck or brisket)
  • 3 tablespoons olive oil
  • 16 ounces small pearl onions
  • 4 cloves garlic
  • 1 cup red apple vinegar
  • 28 ounces crushed tomatoes
  • 1 stick cinnamon (optional)
  • 2 bay leaves
  • 1 teaspoon dried oregano
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Prepare ingredients by chopping onions and garlic and cutting the beef into large chunks.
  2. In a Dutch oven, heat olive oil over medium-high heat. Sear beef in batches until browned on all sides; remove and set aside.
  3. In the same pot, cook pearl onions until golden, then add garlic and sauté for one minute.
  4. Deglaze the pot with red apple vinegar, scraping up any brown bits.
  5. Return seared beef to the pot along with crushed tomatoes, cinnamon stick, bay leaves, oregano, honey, salt, and pepper. Stir well.
  6. Bring to a gentle boil; reduce heat to low and cover. Simmer for about 120 minutes until beef is tender.
  7. Remove bay leaves and cinnamon stick before serving; garnish with fresh parsley.
