  • 3/4 cup light brown sugar
  • 1/4 cup granulated white sugar
  • 2 egg yolks, at room temperature
  • 1 tablespoon vanilla extract
  • 1 to 1 1/2 teaspoons red gel food coloring
  • 3/4 cup chopped white chocolate or white chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a small bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt. Set aside.
  3. In a large bowl, cream the softened butter with the brown sugar and granulated sugar until light and fluffy (about two minutes).
  4. Add the egg yolks, vanilla extract, and red food coloring to the butter mixture; mix on medium speed until fluffy.
  5. Gradually incorporate the dry ingredients until just combined; avoid overmixing.
  6. Fold in the chopped white chocolate evenly throughout the dough.
  7. Use a cookie scoop to place balls of dough onto prepared baking sheets, spacing them two inches apart.
  8. Bake for 10 to 12 minutes, aiming for slightly underdone centers for a chewy texture.
  9. Allow cookies to cool on the baking sheet for five minutes before transferring to a cooling rack.
