  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon cream of tartar
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon baking powder

Instructions

  1. In a mixing bowl, whisk together softened butter, light brown sugar, pumpkin puree, and vanilla extract until smooth.
  2. In another bowl, combine all-purpose flour, pumpkin pie spice, cream of tartar, baking soda, kosher salt, and baking powder.
  3. Gradually mix the dry ingredients into the wet mixture until fully combined. Cover and refrigerate overnight.
  4. Preheat the oven to 350°F (175°C) and line baking sheets with silicone mats.
  5. Mix granulated sugar and remaining pumpkin pie spice in a small bowl.
  6. Scoop dough into balls, roll in spiced sugar, and place on prepared sheets.
  7. Bake for 11-12 minutes until puffed and set around the edges. Cool before serving.
