  • 2 Tbsp granulated sugar
  • 1/4 tsp salt
  • 1/4 tsp cinnamon
  • 1/8 tsp ginger
  • 1/8 tsp nutmeg
  • 1 1/2 cups whole milk
  • 1/2 cup pumpkin puree
  • 3 large eggs
  • 3 Tbsp unsalted butter (melted, plus more for pan)
  • 1 tsp vanilla extract
  • 8 oz cream cheese (softened)
  • 1/2 cup confectioners' sugar
  • 3 Tbsp maple syrup
  • 1 cup heavy cream

Instructions

  1. In a blender, combine flour, sugar, salt, spices, milk, pumpkin puree, eggs, melted butter, and vanilla. Blend until smooth and let rest for 30 minutes.
  2. Heat a nonstick skillet over medium heat and lightly grease it with butter. Pour ¼ cup of batter into the skillet, tilting to spread evenly. Cook until golden on the bottom (about 1-1½ minutes), flip, and cook for another minute.
  3. Repeat with remaining batter.
  4. For the filling, beat together cream cheese, confectioners' sugar, maple syrup, and heavy cream until smooth.
  5. Serve crepes filled with the maple cream cheese mixture or your choice of toppings.
