  • 250g cream cheese, softened
  • 100g powdered sugar
  • 100g pistachio paste
  • 1 tsp vanilla extract
  • 200ml heavy cream, cold
  • 200g fresh raspberries
  • 50g sugar
  • 1 tsp lemon juice
  • 1 tsp cornstarch, dissolved in 1 tbsp water
  • 2 eggs
  • 50g sugar
  • 50g sifted flour
  • ½ tsp baking powder
  • 200g white chocolate
  • 100ml heavy cream
  • 2 tbsp pistachio paste
  • Green food coloring (optional)
  • Crushed pistachios
  • Fresh raspberries

Instructions

  1. Prepare the raspberry center by cooking fresh raspberries with sugar and lemon juice until soft. Thicken with cornstarch, pour into molds, and freeze.
  2. Make the cheesecake filling by beating cream cheese, powdered sugar, pistachio paste, and vanilla. Whip cold heavy cream and fold it into the mixture.
  3. Assemble the domes by layering cheesecake filling in silicone molds, inserting frozen raspberry centers, topping with more filling, and freezing until firm.
  4. Bake a light sponge base by mixing eggs and sugar, folding in flour and baking powder, spreading it on a tray, and baking until golden.
  5. Create the mirror glaze by heating heavy cream and pouring it over chopped white chocolate until smooth; add pistachio paste.
  6. Glaze the domes once unmolded and garnish before serving.
