  • 6 Persian cucumbers or 2 English cucumbers
  • 6 medium Roma tomatoes
  • 1 small red onion
  • 3 small Persian limes or 1 large lemon (about 5 tbsp fresh lemon juice)
  • 2 tbsp dried mint
  • Salt and pepper to taste
  • 3 tbsp olive oil

Instructions

  1. Start by peeling and finely chopping the red onion.
  2. Cut the cucumbers in half lengthwise and chop them finely.
  3. Halve each Roma tomato, remove the seeds, and chop into small pieces.
  4. In a small bowl, combine fresh lemon juice with salt, pepper, and dried mint.
  5. In a large mixing bowl, combine chopped onions, cucumbers, and tomatoes. Pour the citrus mixture over the salad and mix well.
  6. Just before serving, drizzle olive oil over the salad and toss gently.
