  • 1 lb Red Kidney Beans (soaked overnight)
  • 1 lb Cannellini Beans (soaked overnight)
  • 1 lb Ditalini Pasta (or any small cut pasta)
  • 1 qt Tomato Juice
  • 1 15 oz. can of Diced Tomatoes
  • 8 cups Chicken Stock
  • 3 Carrots, sliced
  • 3 Celery stalks, diced
  • 1 Onion, diced
  • 46 cloves Garlic, minced
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Thyme
  • 1 tsp Basil
  • 1 tsp Oregano

Instructions

  1. Heat a heavy pot over medium/high heat.
  2. Add oil and sauté the diced onion until translucent. Then add sliced carrots and celery until tender.
  3. Stir in minced garlic and seasoning—salt, pepper, thyme, basil, oregano—until fragrant.
  4. Pour in tomato juice, diced tomatoes, and chicken stock; bring to a boil.
  5. Add soaked beans; reduce heat and simmer for 45-60 minutes until tender.
  6. Stir in ditalini pasta; cook for an additional 10-12 minutes until al dente.
  7. Adjust seasoning as needed before serving.
