  • ¼ tsp nutmeg
  • Pinch of salt
  • ½ cup unsalted butter (melted)
  • ¾ cup raw honey
  • 2 large eggs
  • 1 cup fresh orange juice
  • Zest of 2 oranges
  • 1 tbsp grated fresh ginger
  • 2 tbsp honey (for glaze)
  • 2 tbsp orange juice (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your baking pan.
  2. In a bowl, whisk together the flour, baking soda, ground ginger, cinnamon, nutmeg, and salt until combined.
  3. In another bowl, mix melted butter with honey. Add eggs one at a time, mixing well after each addition. Stir in orange juice, zest, and grated ginger until smooth.
  4. Fold the dry ingredients into the wet mixture using a rubber spatula until just combined.
  5. Pour the batter into the prepared pan and bake for 40–45 minutes or until a toothpick comes out clean.
  6. For optional glaze, brush warm cake with a mixture of honey and orange juice.
