  • 16 ounces cremini mushrooms
  • 1 small onion
  • 3 cloves garlic
  • ½ cup raw walnut halves
  • 1 cup cooked pinto or black beans
  • 1 ¼ cups cooked pearled barley
  • 2 tablespoons vegan Worcestershire sauce
  • ½ cup panko breadcrumbs
  • spices: thyme, smoked paprika, salt, pepper

Instructions

  1. Preheat a large sauté pan over medium-low heat. Cook chopped onion and sliced mushrooms for about 15 minutes until moisture is released. Add minced garlic, thyme, and paprika; sauté for an additional 2-3 minutes until dry.
  2. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  3. In a food processor, pulse walnuts until coarsely crumbled. Add the mushroom mixture along with barley, beans, nutritional yeast, Worcestershire sauce, breadcrumbs, salt, and pepper. Pulse until combined but still slightly chunky.
  4. Form the mixture into eight patties using about half a cup each.
  5. Bake on the prepared sheet for 30-35 minutes, flipping halfway through.
