  • 1 cup chopped grape tomatoes
  • 1 large cucumber (diced)
  • 1/4 cup diced red onion
  • 1 cup cooked quinoa
  • 2 cooked chicken breasts (diced)
  • 1/2 cup pepperoncini
  • 1/3 cup feta cheese
  • 1/3 cup olive oil
  • 3 tablespoons apple cider vinegar
  • 1 1/2 teaspoons dijon mustard
  • Juice from 1 lemon
  • 2 teaspoons minced garlic
  • 3/4 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Wash and chop the romaine lettuce, placing it in a large mixing bowl.
  2. Chop the grape tomatoes, cucumber, and red onion, adding them to the bowl along with cooked quinoa and diced chicken.
