  • 5 large eggs (separated)
  • 1 cup white granulated sugar
  • 1 ½ tsp vanilla extract
  • 1/4 cup whole milk
  • 1 cup all-purpose flour
  • 14 oz sweetened condensed milk
  • 12 oz evaporated milk
  • 1/2 cup heavy whipping cream
  • Fresh mango (for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Beat egg whites until soft peaks form; gradually add half of the sugar until stiff peaks form.
  3. In another bowl, whisk egg yolks with remaining sugar until pale; stir in vanilla and whole milk.
  4. Combine flour, baking powder, and salt; mix into yolk mixture. Gently fold in egg whites.
  5. Pour batter into greased dish and bake for about 25 minutes or until a toothpick comes out clean. Let cool.
  6. Whisk together sweetened condensed milk, evaporated milk, and heavy cream.
  7. Poke holes in the cooled cake and pour the milk mixture over it.
  8. Whip heavy cream with powdered sugar and vanilla until soft peaks form; spread over soaked cake and top with fresh mango.
