  • 4 salmon fillets (6 oz each)
  • 2 lemons (1 for juice, 1 for slices)
  • 4 cloves garlic (minced)
  • 4 medium potatoes (about 2 lbs)
  • 1 lb broccoli florets
  • 1/2 cup unsalted butter
  • Olive oil
  • Salt and pepper
  • 1 teaspoon paprika

Instructions

  1. Preheat your oven to 425°F (220°C). Optionally, line a baking sheet with parchment paper.
  2. Prepare the potatoes by washing, peeling if desired, and cutting them into small cubes. Toss with olive oil, salt, pepper, and paprika in a large bowl.
  3. Spread the seasoned potatoes on one side of the baking sheet in a single layer and roast for 25 minutes, stirring halfway through.
  4. Meanwhile, melt butter in a medium saucepan over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Stir in the juice of one lemon and season to taste.
  5. Season salmon fillets with salt and pepper. After 15 minutes of roasting potatoes, push them aside on the baking sheet and add salmon fillets into the cleared space.
  6. Spoon lemon butter sauce over each salmon fillet, topping with lemon slices. Place broccoli florets on the baking sheet; drizzle with olive oil and season.
  7. Roast everything together for an additional 15-20 minutes until salmon is cooked through and broccoli is tender.
  8. Remove from oven and let rest for a few minutes before serving.
