  • 12 fresh oysters, scrubbed clean and kept on the half shell
  • 6 tbsp unsalted butter
  • 2 garlic cloves, finely minced
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tbsp chopped fresh parsley
  • 1/4 tsp sea salt
  • 1/8 tsp freshly ground black pepper

Instructions

  1. Preheat your grill to high heat (about 500°F / 260°C).
  2. In a small saucepan over low heat, melt the butter. Add minced garlic and cook until fragrant, about 1 minute.
  3. Stir in lemon juice, lemon zest, parsley, sea salt, and black pepper; remove from heat once well combined.
  4. Place cleaned oysters on the grill with their flat side up and grill for 2–3 minutes until edges curl.
  5. Spoon approximately 1 teaspoon of lemon butter sauce onto each oyster and grill for an additional 1–2 minutes until butter sizzles.
  6. Carefully remove from the grill using tongs; serve immediately with lemon wedges and extra parsley.
