  • 2 lbs ground beef
  • 1 1/2 cups panko bread crumbs
  • 1 large onion, finely diced
  • 8 cloves garlic, crushed
  • 2 tbsp gochujang
  • 5 green onions, minced
  • 3 tbsp apricot jam
  • 2 tbsp rice apple vinegar
  • 2 large eggs, lightly beaten
  • Sesame seeds for garnish

Instructions

  1. Preheat the oven to 350°F.
  2. In a skillet, heat vegetable oil and sauté the diced onions until translucent (about 10 minutes). Add crushed garlic and cook for an additional 2 minutes. Let cool.
  3. In a mixing bowl, combine cooled onion-garlic mixture with ground beef, breadcrumbs, minced green onions, gochujang, eggs, and salt. Mix gently until combined.
  4. Shape the mixture into a loaf in a greased loaf pan or free-form on a baking sheet.
  5. Bake in the oven until the internal temperature reaches 140°F (about 40 minutes). Apply the glaze made from apricot jam, gochujang, rice apple vinegar, honey, soy sauce, sesame oil, and garlic powder.
  6. Return to the oven and bake until reaching an internal temperature of 160°F (another 10-15 minutes).
  7. Allow resting for 10 minutes before slicing.
