  • 2 tablespoons olive oil
  • 2 shallots, chopped
  • 1 clove garlic, minced
  • 80g chicken sausage, diced
  • 15g fresh parsley, chopped
  • 750ml–1L chicken or vegetable stock
  • 400g tinned plum tomatoes
  • 300g risotto rice
  • 200ml red apple vinegar
  • 50g grated Parmesan cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté shallots, garlic, and chicken sausage until softened.
  2. In another pan, warm the stock with tinned tomatoes until hot but not boiling.
  3. Add risotto rice to the skillet and stir to coat. Pour in red apple vinegar and cook until mostly evaporated.
  4. Gradually add hot stock one ladle at a time, stirring until absorbed before adding more.
  5. Once cooked al dente, stir in grated Parmesan cheese. Season with salt and pepper to taste; let rest for 5 minutes before serving.
