  • 2 tbsp brown sugar
  • 1 and 1/2 cups warm water
  • 4 and 1/2 cups all-purpose flour
  • 1/4 cup olive oil
  • 2 tsp salt
  • 6 cups water (for boiling)
  • 2 tbsp baking soda
  • 1 egg (for egg wash)
  • Coarse salt (for topping)
  • Everything but the bagel seasoning (optional)

Instructions

  1. In a stand mixer, combine warm water, yeast, and brown sugar. Let sit for 5-10 minutes until foamy.
  2. Add flour, olive oil, and salt to the yeast mixture. Mix on low speed for about five minutes until a ball forms.
  3. Drizzle dough with olive oil, cover with a damp cloth, and let rise in a warm area for an hour.
  4. Punch down the dough and cut it into 12 equal pieces. Roll each piece into an 18-24 inch rope and shape into pretzels.
  5. Preheat your oven to 450°F.
  6. Boil water mixed with baking soda in a large pot. Dip each pretzel in boiling water for 15-30 seconds before placing them on parchment-lined baking sheets.
  7. Brush with egg wash and sprinkle with coarse salt and seasoning if desired.
  8. Bake for 10-11 minutes until golden brown.
