  • 1 large yellow onion, chopped
  • 10 ounces mushrooms, cut into thick/chunky slices
  • 5 cloves garlic, minced
  • 1 ½ teaspoons dried Italian herb blend (or a combination of thyme, rosemary, oregano)
  • 2 medium carrots, peeled and cut into coins or half moons
  • 1 ½ pounds yellow potatoes, cut into large bite-size pieces (or other variety)
  • 1 (14.5 oz) can crushed tomatoes (preferably fire-roasted)
  • 3 ½ cups vegetable broth
  • 1 bay leaf
  • 1 tablespoon tamari (for GF) or soy sauce
  • 1 teaspoon fine sea salt (or more to taste)
  • black pepper, to taste
  • 1 (15 oz) can chickpeas, rinsed and drained (or white beans)

Instructions

  1. In a large soup pot over medium heat, warm 1 tablespoon of oil (or omit for oil-free). Add 1 chopped yellow onion and 10 ounces of thickly sliced mushrooms. Sauté for about 8 minutes until moisture from the mushrooms evaporates.
  2. Stir in 5 cloves of minced garlic, 1½ teaspoons of dried Italian herbs, and 2 chopped medium carrots. Cook for another 2-3 minutes.
  3. Add 1 can (14.5 oz) crushed tomatoes, 1½ pounds of diced yellow potatoes, 3½ cups vegetable broth, 1 bay leaf, 1 tablespoon tamari or soy sauce, salt, and pepper to taste. Bring to a simmer, cover, reduce heat to low, and cook for about 20 minutes until the potatoes are fork-tender.
  4. In the last few minutes of cooking, stir in 1 can (15 oz) drained chickpeas without the lid to allow the stew to thicken slightly.
  5. Remove the bay leaf before serving warm.
