  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1 medium carrot (diced)
  • 1 celery stalk (diced)
  • 1 can (15 oz) cannellini beans (drained and rinsed)
  • 1 can (15 oz) red kidney beans (drained and rinsed)
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable or chicken broth
  • 1 cup ditalini pasta
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp crushed red pepper flakes
  • Salt and black pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté diced onion, minced garlic, diced carrot, and diced celery until softened (about 5 minutes).
  2. Stir in cannellini beans, red kidney beans, and diced tomatoes; mix well.
  3. Pour in vegetable or chicken broth; bring to a gentle boil and then reduce heat to low.
