  • 1/3 cup butterscotch chips, melted and slightly cooled
  • 1/2 cup buttermilk, at room temperature
  • 1 3/4 cups all-purpose flour, spooned and leveled then sifted
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups unsalted butter (for frosting)
  • 1 cup butterscotch chips (melted, for frosting)
  • 2 1/4 cups powdered sugar
  • 3/4 tsp butter extract (for frosting)
  • 1/2 tsp vanilla (for frosting)
  • 1/4 cup butterscotch chips (for drizzle)
  • 1 tbsp heavy cream (for drizzle)
  • 1/2 tbsp honey (for drizzle)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, cream together softened butter with sugars until fluffy. Add eggs one at a time, mixing well. Stir in vanilla extracts and melted butterscotch chips.
  3. In another bowl, combine flour, baking powder, baking soda, and salt. Gradually add dry ingredients to the wet mixture alternately with broth until just combined.
  4. Pour batter into muffin tins about two-thirds full and bake for approximately 15 minutes or until a toothpick comes out clean.
  5. While cooling, prepare the buttercream by beating softened butter until fluffy; gradually add powdered sugar and melted butterscotch chips until smooth.
  6. Frost cooled cupcakes generously with buttercream and drizzle with a melted butterscotch ganache before serving.
