  • 1 kg boneless chicken (thighs or drumsticks), cut into chunks
  • 2 tablespoons soy sauce
  • 1 can (400 mL) coconut milk
  • 45 slices Fresh ginger, peeled and thinly sliced
  • 2 cloves Garlic, minced
  • 1 tablespoon Brown sugar
  • 2 tablespoons Fresh lime juice
  • Salt and pepper, to taste

Instructions

  1. In a large mixing bowl, combine sliced ginger, minced garlic, soy sauce, coconut milk, brown sugar, lime juice, salt, and pepper. Whisk until blended.
  2. Add chicken chunks to the marinade and coat well. Cover with plastic wrap and refrigerate for at least 30 minutes.
  3. Thread marinated chicken onto soaked skewers, leaving space between pieces.
  4. Preheat grill to medium-high heat and oil grates lightly.
  5. Grill skewers for 4-5 minutes on each side until chicken is charred and cooked through.
  6. Serve hot with a squeeze of fresh lime juice.
