  • ⅔ cup uncooked white rice
  • ½ cup cherry tomatoes
  • ½ cup kalamata olives
  • ½ cup feta cheese (plus more for topping)
  • 2 tablespoons fresh dill
  • Olive oil
  • Garlic
  • Red onion
  • Zucchini
  • Italian seasoning
  • Salt
  • Pepper

Instructions

  1. Preheat your oven to 350°F. Cook the rice according to package instructions.
  2. Slice the bell peppers in half and discard seeds. Arrange in a baking dish.
  3. In a skillet, heat olive oil over medium heat. Add ground chicken and cook until no longer pink; drain excess liquid.
  4. Stir in garlic, onion, zucchini, and Italian seasoning; cook until fragrant.
  5. In a bowl, combine cooked rice with chicken mixture, cherry tomatoes, olives, feta cheese, and dill.
  6. Stuff each pepper with the mixture and top with additional feta cheese.
