  • 1 cup grated Parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 2 large eggs
  • 4 cloves garlic, minced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup whole milk
  • 3 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon chopped parsley
  • Pinch of salt

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a baking sheet with parchment paper or grease a loaf pan.
  2. In a mixing bowl, combine ground chicken, Parmesan cheese, panko breadcrumbs, eggs, minced garlic, and milk. Season with salt and pepper; mix until just combined.
  3. Shape the mixture into a loaf on the baking sheet or press into the loaf pan.
  4. Bake for 40–45 minutes until the internal temperature reaches 165°F (74°C).
  5. While baking, melt butter in a saucepan over medium heat; add minced garlic and sauté until fragrant. Stir in additional Parmesan and parsley.
  6. Brush the glaze over the meatloaf during the last few minutes of baking.
  7. Let rest for 5 minutes before slicing.
