  • 2/3 cup confectioners’ sugar plus extra for dusting

  • 1 chocolate-covered toffee bar (finely chopped)

Instructions

  1. Dissolve the espresso powder in boiling water; set aside.
  2. Cream butter and confectioners’ sugar using an electric mixer until fluffy.
  3. Add vanilla and espresso mixture; mix well.
  4. Gradually incorporate flour until just combined.
  5. Fold in chopped chocolate-covered toffee.
  6. Shape dough into a rectangle in a zip-lock bag and refrigerate for at least 2 hours.
  7. Preheat oven to 325°F (163°C) and prepare a baking sheet with parchment paper.
  8. Cut dough into desired shapes, poke holes, and bake for 18-20 minutes until golden.
  9. Dust with extra confectioners’ sugar while hot and allow to cool before storing.
