  • 1 pound Italian sausage (mild or spicy, casings removed)
  • 3 medium carrots (peeled and diced)
  • 1 medium onion (peeled and diced)
  • 23 ribs celery (diced)
  • 1 medium red or orange bell pepper (finely chopped)
  • 23 cloves fresh garlic (finely chopped)
  • 7 cups low-sodium chicken broth
  • 1 can petite diced tomatoes (14.5 ounces)
  • 1 ½ cups Ditali pasta (dry)
  • 1 ½ cups fresh spinach (chopped)

Instructions

  1. In a large pot over medium-high heat, crumble and cook the Italian sausage until browned. Transfer to a plate.
  2. In the same pot, sauté onions, carrots, celery, and bell pepper for about 5–7 minutes until softened. Add garlic and seasonings.
  3. Return the sausage to the pot along with chicken broth and diced tomatoes. Bring to a boil and then reduce heat to simmer for 10–15 minutes.
  4. Stir in pasta and cook until tender, about 10 minutes.
  5. Add spinach and cook until wilted, about 1–2 minutes.
  6. Serve hot garnished with freshly grated cheese and herbs.
