  • 1 medium onion
  • 1 medium jalapeño pepper
  • 1 cup corn
  • 3/4 cup dried red lentils
  • 1 medium bell pepper (any color)
  • 3.5 cups vegetable broth
  • 15 ounces black beans (drained and rinsed)
  • 15 ounces red beans (drained and rinsed)
  • 2 tbsp olive oil
  • sliced avocado
  • crushed tortilla chips
  • sour cream
  • fresh cilantro

Instructions

  1. Chop the onion, jalapeño pepper, and bell pepper. Rinse the lentils until clear.
  2. In the crockpot, combine chopped onion, olive oil, vegetable broth, jalapeño pepper, corn, lentils, tomato sauce, bell peppers, salsa, black beans, red beans, smoked paprika, garlic powder, cumin, cayenne pepper, and cream cheese.
  3. Set on low heat and cook for around 8 hours or on high heat for about 4 hours.
  4. Taste and adjust seasoning before serving hot with desired toppings.
