  • 6 bone-in, skin-on chicken thighs
  • 1 cup mixed olives (green and kalamata)
  • 8 oz jar roasted red peppers
  • ½ medium onion, sliced
  • 2 Tbsp olive oil
  • Juice of 1 lemon
  • 6 garlic cloves, minced
  • Fresh herbs: oregano, parsley, thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Season chicken thighs generously with salt and pepper. Sear each thigh for about 5 minutes per side until golden brown.
  2. Place the seared chicken thighs in the slow cooker skin side up.
  3. Add roasted red peppers, olives, and sliced onion around the chicken.
  4. In a bowl, whisk together olive oil, lemon juice, garlic, fresh herbs, salt, and pepper. Pour evenly over the chicken.
  5. Cover and cook on high for 3-4 hours or low for 6-8 hours until the chicken reaches an internal temperature of 185°F.
