  • 23 pounds boneless chuck roast
  • 1 tablespoon avocado oil or neutral oil (plus more for taco frying)
  • Coarse ground salt and fresh ground pepper
  • 4 dried Guajillo chiles
  • 56 Chipotle chilis in adobo
  • 1 small red onion (thinly sliced)
  • 8 whole cloves garlic (smashed)
  • 32 ounces beef stock
  • 1 tablespoon tomato paste
  • 14.5 ounce can fire roasted diced tomatoes
  • ¼ cup apple cider vinegar
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 cinnamon stick
  • 3 dry bay leaves
  • 1 teaspoon smoked paprika
  • ½ tablespoon fresh grated ginger
  • 1 teaspoon ground coriander
  • Corn or flour tortillas
  • Lime wedges
  • Fresh cilantro leaves
  • Diced white onion
  • Shredded Oaxacan cheese (or Italian cheese)

Instructions

  1. Heat avocado oil in a cast iron skillet over high heat. Season the beef with salt and pepper, then sear for 5-6 minutes on each side until browned.
  2. Transfer the seared beef to a crockpot along with all remaining sauce ingredients. Stir to combine, cover, and cook on low for 8 hours.
  3. Once cooked, shred the beef using two forks on a rimmed baking sheet.
  4. Remove bay leaves and cinnamon stick from the crockpot. Blend the remaining sauce until smooth and return it to the crockpot.
  5. Mix shredded beef with desired amount of sauce before serving in warmed tortillas topped with cilantro and onions.
