  • 1 cup heavy cream
  • 1 (9-ounce) package refrigerated cheese tortellini
  • 2 cups cooked chicken breast, diced or shredded
  • 4 cups fresh baby spinach
  • 1/2 cup grated Parmesan cheese, plus extra for garnish
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion until soft (about 4-5 minutes), then add minced garlic and cook for another minute.
  2. Stir in chopped sun-dried tomatoes and cook for 2 minutes. Add chicken broth and bring to a gentle simmer. Season with Italian seasoning, salt, and pepper.
  3. Add cheese tortellini and cook according to package instructions (3-5 minutes). When nearly done, incorporate cooked chicken and fresh spinach, cooking until spinach wilts (2-3 minutes).
  4. Reduce heat; gradually stir in heavy cream until heated through but not boiling. Mix in grated Parmesan cheese until melted. Adjust seasoning if necessary.
