Instructions

  1. Prepare the cranberries by roughly chopping them.
  2. In a food processor, cream together the butter, sugar, and citrus zest until smooth.
  3. Add flour and vanilla extract; pulse until the mixture forms lumps.
  4. Fold in the chopped cranberries gently.
  5. Form the dough into a log about 10-12 inches long, wrap tightly in plastic, and chill for at least 3 hours.
  6. Preheat the oven to 350°F (175°C) and line a cookie sheet with parchment paper.
  7. Slice the chilled dough into 1/3 inch thick cookies and space them on the prepared sheet.
  8. Bake for 10-12 minutes until edges are lightly golden; let cool before transferring to a rack.
