  • 1 can (7oz) chipotle peppers in adobo sauce
  • 1/4 cup extra virgin olive oil
  • 1/4 cup apple cider vinegar
  • 1/4 cup honey
  • 8 cloves garlic
  • 1 bunch cilantro
  • Juice of ½ lime
  • 2 tsps chipotle powder
  • 1 tsp chili powder
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 2 tsps salt
  • 1/2 tsp pepper

Instructions

  1. In a blender or food processor, combine chipotle peppers, apple cider vinegar, honey, olive oil, lime juice, cilantro, garlic cloves, cumin, chili powder, and salt. Blend until smooth.
  2. Place your choice of steak in a large bowl and pour the marinade over it. Save 1/4 cup for later use.
  3. Remove excess marinade from the steak and heat a skillet over high heat with a little oil. Sear each side for 3-4 minutes until cooked to your liking.
  4. Let the steak rest briefly before slicing against the grain into thin strips; cube if desired.
  5. Return cubed steak to the skillet with reserved marinade and sauté on high heat for about 20-30 seconds until heated through.
