  • 1/2 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 cup heavy cream
  • 12 oz semisweet chocolate, melted

Instructions

  1. Preheat your oven to 350°F (180°C) and grease a 9-inch springform pan.
  2. In a mixing bowl, combine chocolate cookie crumbs with melted butter. Press into the bottom of the springform pan and bake for 10 minutes. Let cool.
  3. Beat softened cream cheese until smooth; add sugar and vanilla extract. Mix until creamy.
  4. Whip heavy cream in another bowl until stiff peaks form. Fold melted chocolate into the cream cheese mixture, then gently fold in whipped cream until no streaks remain.
  5. Pour filling over the cooled crust and smooth the top with a spatula. Refrigerate for at least 4 hours or overnight to set.
  6. Before serving, dust with powdered sugar and cocoa powder.
