  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons vegetable oil
  • 1 cup bell peppers
  • 1 cup broccoli florets
  • 1 carrot
  • 3 green onions (for garnish)
  • 1/2 cup soy sauce (or tamari)
  • 1/4 cup honey or maple syrup
  • 2 tablespoons rice vinegar
  • 2 teaspoons cornstarch mixed with water
  • Garlic and ginger

Instructions

  1. Cook the noodles in salted boiling water until al dente, then drain.
  2. In a skillet or wok, heat vegetable oil over medium-high heat. Stir-fry the sliced chicken for about 5-7 minutes until browned.
  3. Add bell peppers, broccoli, and carrot; stir-fry for another 3-5 minutes until slightly tender.
  4. Mix soy sauce, honey (or maple syrup), rice vinegar, garlic, ginger, and cornstarch mixture in a bowl.
  5. Pour the sauce into the pan and cook for an additional 2-3 minutes until thickened.
  6. Toss in the cooked noodles and combine well before serving hot with green onions on top.
