  • 1 cup heavy cream
  • 1/2 cup amaretto liqueur
  • 1 teaspoon vanilla extract
  • 1/2 cup cherry juice
  • 1 cup fresh cherries, pitted and chopped
  • 1 package ladyfingers
  • 1/4 cup cocoa powder

  2. In another bowl, combine sugar and cherry preserves. Fold this into the mascarpone mixture along with chopped cherries.
  3. Dip ladyfingers quickly in a mix of amaretto and cherry juice. Layer them in a baking dish followed by half of the mascarpone mixture. Repeat with another layer of ladyfingers and remaining mascarpone.
  4. Refrigerate for at least 4 hours or overnight. Dust with cocoa powder before serving.
