  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 tablespoon taco seasoning
  • 1 package (9 oz) cheese tortellini
  • 2 cups shredded cheddar cheese
  • 1 cup enchilada sauce
  • Olive oil for cooking
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat. Sauté diced onion until translucent, then add minced garlic and cook for an additional minute.
  2. Add ground beef to the skillet. Cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
  3. Stir in black beans, diced tomatoes, and taco seasoning. Let simmer for about 5 minutes. Season with salt and pepper to taste.
  4. Boil salted water in a large pot and cook tortellini according to package instructions (about 3–5 minutes). Drain once they float to the top.
  5. Preheat your oven to 350°F (175°C).
  6. In a mixing bowl, combine cooked tortellini with the beef mixture until well coated.
  7. Spread enchilada sauce at the bottom of a baking dish. Layer the tortellini mixture evenly on top, then pour remaining enchilada sauce over it.
  8. Top with shredded cheddar cheese.
  9. Cover with aluminum foil and bake for 20 minutes; remove foil and bake an additional 10–15 minutes until cheese is bubbly.
