  • 2 cups cherry tomatoes
  • 1 tablespoon olive oil
  • 2 tablespoons basil pesto
  • 5 cloves garlic (minced)
  • 1 cup sour cream
  • ½ cup fresh chopped basil
  • 8 ounces low-moisture mozzarella cheese (cut into chunks)
  • 8 ounces shredded provolone cheese
  • ¼ cup freshly grated parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C) and adjust the rack to the middle position.
  2. Place 1 cup of whole cherry tomatoes in a baking dish, drizzle with olive oil, add pesto and minced garlic, then season with salt and pepper. Bake for 15 minutes.
  3. In a mixing bowl, combine sour cream and chopped basil with mozzarella chunks, provolone cheese, and grated parmesan until well mixed.
  4. Fold the cheese mixture into the roasted tomatoes. Halve the remaining cherry tomatoes and arrange them on top.
  5. Return to the oven and bake for another 20 minutes until bubbly and slightly golden.
