  • 1 ¼ cup all-purpose flour
  • 2 tbs cornstarch
  • ½ tsp salt
  • 1 tsp baking powder
  • ½ cup unsalted butter (room temperature)
  • ¾ cup granulated sugar
  • 2 large egg whites (room temperature)
  • 2 tbs canola oil
  • ⅓ cup milk (room temperature)
  • 1 tsp vanilla extract
  • ¼ cup rainbow sprinkles
  • 1 stick unsalted butter (for frosting)
  • 1.52 cups powdered sugar
  • ½ tsp vanilla extract (for frosting)
  • 12 tablespoons milk or cream (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and wash mason jars.
  2. In one bowl, whisk together flour, cornstarch, salt, and baking powder; set aside.
  3. In another bowl, cream together butter and sugar until fluffy.
  4. Add egg whites, canola oil, milk, and vanilla to the butter mixture; mix well.
  5. Gradually combine dry ingredients with wet mixture; fold in sprinkles.
  6. Pour batter into jars halfway and bake for about 15 minutes or until a toothpick comes out clean.
  7. Prepare frosting by mixing butter with powdered sugar and vanilla; add milk for desired consistency.
  8. Once cooled, layer frosting between cake layers in each jar and top with more frosting and sprinkles.
