  • 1 cup sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 (5.1 oz) box butterscotch instant pudding mix
  • 2¾ cups all-purpose flour
  • 1 cup butterscotch chips
  • 1 cup white chocolate chips

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a stand mixer, cream together softened butter and sugars until smooth. Add eggs and vanilla; mix until combined.
  3. In a separate bowl, whisk together salt, baking soda, and pudding mix. Gradually add this to the wet mixture, followed by the flour until just combined.
  4. Gently fold in the butterscotch and white chocolate chips using a wooden spoon.
  5. Chill the dough in the refrigerator for 15–20 minutes.
  6. Drop spoonfuls of dough onto greased baking sheets, spacing them apart.
  7. Bake for 7–9 minutes or until lightly golden brown on top. Allow cookies to cool on a rack before serving.
