  • 2 boneless, skinless chicken breasts
  • 8 oz spaghetti or penne pasta
  • 2 cups cherry tomatoes, diced
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1/4 cup grated Parmesan cheese

  1. Cook the pasta according to package instructions in a large pot of salted boiling water. Drain and set aside.
  2. Season chicken breasts with Italian seasoning, garlic powder, salt, and pepper.
  3. Heat olive oil in a skillet over medium heat and cook the chicken for 5-7 minutes per side until golden brown and cooked through. Let rest before slicing.
  4. In a mixing bowl, combine diced tomatoes, minced garlic, chopped basil, balsamic vinegar, olive oil, and salt; toss to mix well.
  5. Toss the cooked pasta in the skillet with any remaining chicken drippings. Slice the chicken and place it on top of the pasta along with the bruschetta topping.
