  • 2 cups granulated sugar
  • ¾ cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • ½ cup cooled brewed coffee
  • 1 tsp dried culinary lavender (ground finely)
  • 2 cups fresh blueberries
  • ¼ cup sugar
  • 1 tbsp lemon juice
  • 1 tsp cornstarch mixed with 1 tbsp water
  • 1 cup heavy cream
  • 1 cup dark chocolate chips
  • 1 tsp dried culinary lavender
  • 1 tbsp unsalted butter
  • Fresh blueberries for garnish
  • Edible lavender flowers for garnish
  • Chocolate shavings for garnish

Instructions

  1. Preheat oven to 350°F (175°C) and prepare three 9-inch round cake pans.
  2. In one bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, mix sugar and vegetable oil until combined. Add eggs one at a time and vanilla extract.
  4. Infuse buttermilk with ground lavender.
  5. Gradually combine dry ingredients with wet mixture, alternating with infused buttermilk and stir in cooled coffee.
  6. Bake for 30-35 minutes; cool on racks.
  7. Prepare blueberry compote by heating fresh blueberries with sugar and lemon juice until thickened.
  8. Make ganache by steeping cream with lavender and melting chocolate; mix until smooth.
  9. Assemble layers with compote in between; pour ganache over top.
