  • 1 1/2 cups cooked rice (preferably day-old)
  • 1 chicken breast, diced
  • 2 eggs, beaten
  • 1/2 cup diced carrots
  • 1/3 cup green peas
  • 2 cloves garlic, minced
  • 2 green onions, sliced (for garnish)
  • 2 to 3 tablespoons soy sauce
  • 1 tablespoon oil (plus more as needed)
  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon Sriracha (adjust to taste)
  • 1 teaspoon rice vinegar

Instructions

  1. Prepare the bang bang sauce by mixing mayonnaise, sweet chili sauce, Sriracha, and rice vinegar in a small bowl; set aside.
  2. In a large skillet or wok, heat oil over medium-high heat and cook diced chicken until browned (about 5–6 minutes). Remove from pan.
  3. Scramble the beaten eggs in the same pan until just set; remove and set aside.
  4. Sauté diced carrots and minced garlic in the pan for 2–3 minutes before adding green peas and cooking for another minute.
  5. Add cold rice to the pan and stir-fry on high heat for 3–4 minutes.
  6. Return chicken and scrambled eggs to the pan; mix well.
  7. Pour in soy sauce and bang bang sauce; stir until everything is evenly coated.
  8. Garnish with sliced green onions before serving hot.
