  • 2 ripe avocados
  • 4 thick slices of bread (sourdough, multigrain, or olive)
  • 4 oz smoked salmon
  • 1/3 cup crème fraîche
  • 1 tbsp fresh lemon juice
  • Zest from one lemon
  • 1 tbsp chopped fresh dill
  • 2 spring onions/scallions
  • 2 tbsp capers (chopped)
  • Extra-virgin olive oil for grilling

Instructions

  1. Brush both sides of each bread slice with olive oil and grill in a skillet or grill pan over medium-high heat for about 2 minutes on each side until golden brown.
  2. In a mixing bowl, combine the crème fraîche, lemon juice, lemon zest, dill, chopped spring onions, and capers. Season with salt and pepper to taste.
  3. Spread mashed avocado generously on each slice of toasted bread. Top with pieces of smoked salmon and finish with a dollop of the lemon-herb crème fraîche.
